Any good recipe for parve cholent?!?!
We have a fellow over for Shabbos sometimes who doesn't eat meat. He seems to like it.

Lots of sautéed onions and garlic, potatoes, beans, barley, chickpeas, wheat, a sweet potato, tomato sauce, spiced with paprika, black pepper, salt, and brown sugar. You can add carrots if you want. Put on til boil and then change to low flame (low bubble) [or crockpot] for many hours.

I've used this recipe - It's very tasty but very high in sodium, though you can cut that down a lot by omitting the soy sauce.

While I can't help with the actual recipe, I know that the key is in the "kishke" that's in it. I believe onions are diced and fried and then mixed (along with the oil, iinm) with flour, eggs salt and pepper (and possibly other spices, and maybe even a touch of soup mix - aka MSG, I really don't know). Lots of beans, a nice amount of barley, and some potatoes, salt and pepper and cook to perfection.

TBH, if I would try that recipe I would start off by dropping the following:

⅔ cup ketchup
¼ cup barbecue sauce
¼ cup brown sugar

I might reduce or eliminate the soy sauce, but would definitely cut out all those sugary ingredients first.

I do stand by my assertion that a good "kishke" is a key ingredient, along with the beans.
