I don't think you can get AIOs that are as high poered as this, they're also not expandable (e.g. if you want to add an additional 3TB HDD).

Graphics upgrades make sense if you're going to power big screens at high resolution and/or play games edit pictures/videos. RAID 0 is for performance, RAID 1 for redundancy. No RAID means no performance or data-integrity (redundancy) over one/two drive(s) in a standard config.

One other thing, if you're going to load this guy up with upgrades it might make sense to wait for a Dell*/Lenovo 25/30/35% off coupon, if they still do those.

*) I know, you don't like dell...

I strongly suggest staying away from all in ones.
I have the dell xps m2010 and me and everyone I know who has one have had awful experiences with it

Not yet...not really sure what I should upgrade so I'm just sitting on the fence.

Ok, let's run through the options:

1) Windows 7: If you want a better option, pirate it. MS has too much $$$ anyway. :D
2) HP Total care is your call - $249 for 4 years is steep, considering this thing will probably be worth $249 in 3 years :D
3) Processor is the best offered, a downgrade isn't recommended.
4) RAM: You're going to appreciate this RAM when you have a gazillion tabs open in Chrome/FF while running all your other stuff.
5) HDD: Don't bother with the RAID performance options, RAID security is your call, at $120 for another 1TB + RAID controller it isn't steep, though RAID 1 might affect performance (if yes, very marginally, boot times might also be delayed a bit, as the BIOS has to initialize the RAID).
6) Secondary HDD: Don't bother, you can buy em for less and install them on your own. Besides, if you're only going to need one in six months or more, prices are likely to drop.
7/8) I trust you don't need my advice regarding software, for a hint see #1 above.
9) GPU: If you're seriously considering 2/3 monitors, get the 3GB DDR5 GPU, at $120 you won't save much purchasing it yourself (including the 3GB RAM for it), this way it's covered by the HP warranty.
10) Monitor: You can choose the one you prefer and get it for less.
11) Speakers: Buy 'em yourself.
12/13) Blu Ray Drive: If you need one, buy it yourself, you'll save $60 or more at least. Personally I just stream any HD media I need.
14) Networking: Buy a wireless card on your own if you want/need one.
15+ are just upsells, get 'em elsewhere for less.

It means it'll use more power (higher electricity bill). It also means you won't have issues powering whatever you'll pack in there (even if you became a gamer and added another video card).

I saw the question, and I'm confident (but not sure) you can. If you're going to have big screens with high resolutions (and/or engage in gaming or photo/video editing), it makes a lot of sense (IMHO) to upgrade to the best graphics card option for $120 more.

Wile not an expert in the graphics dept., I think it depends on what it's used for. Even with two screens, the 2gig GPU will do, 'saving' you $70. If you end up going with 3 screens and intensive graphics, You're best off getting your own high-range GPU (even the 3gig one is mid-range for what's out there).
