A Bain-Marie is usually a roasting dish filled with water surrounding a dish that needs to be cooked surrounded by water, like a Christmas pudding, cheese soufflés, caramel custards, etc. This method is usually used with dishes that need to be cooked thus “in the oven”.

Yes, some cheesecakes are supposed to be baked like this.  You can do it the cheap/easy way and use a disposable 9X13 pan.  Just be careful not to let the water splash into the cheesecake when putting it into and taking it out of the oven.

Do you ever do this? for chessccakes?
Yes. By me, some of them are actually made that way. I was told it prevents it from cracking.

I wasn't aware that it's a specific baking technique though.
