How can I apply it to my existing reservation?

I remember reading somewhere that you can call them and they can manually add it to existing reservation.

Generally it depends on whether it is a Chase issued (via the credit card) or Hyatt issued certificate.   Chase is a no-go while the Hyatt may be converted to a reduced number of points (i.e. 10K) based upon your status/rep.

they weren't budging in the phone. I'm explorist this year although I've been globalist for a few years beforehand. So is HuCA all that I can do?

I was curious and did a search.  Hyatt Regency Paris Étoile still has reward nights for end of June stay. I have stayed in this hotel before, a good one.
