True but the point is for the coming year we're trying to show that we're going to really be better.

Sicha kishtiya is a year-round issue, that no one seems to worry about until Pesach.
I've never really understood situations like that and for example only eating pas yisroel during aseres yimei teshuva.
If it's wrong, why not obide by it all year long?  If it's not who exactly are we fooling by observing something for 10 days?

Just food for thought.  Please don't take anything I say too seriously in regards to the halacha...
I'll go and put a chumra into the proper context, a chamra or kila is : when there is a machlokes haposkim there is always the halacha and then either a chumra or kila. for example;  there is a machlokes haposkim if your allowed to sell chometz gumar to a goy, there are those who say it's assur and thos who say it's matur ( the shiele is if it looks like a haroma) we pasken that it is assur but bmokom hefsed mruba like a Grocery store we are meikel,  same thing with your example of aseres yimei teshuva we pasken pas akum is mutar but the rem"a says aseres yimei teshuva we should be machmur to the poskim that state pas achum is assur

same thing here with thre machlokes of Sicha kishtiya we pasken that Sicha lav kishtiya but pesach that Chametz is b'Kareis we are machmir to the poskim that state Sicha kishtiya,

Not the OU apparently and like they say, if you don't use the OU don't eat anything processed in the US as just about every other hechsher relies on products certified by the OU.

Then again many (most?) lubavitchers won't eat anything processed at all on Pesach.

We is what the shulchan aruch paskens. there are chumras that is stated in shulchan aruch then there are chumros that people are noheg for years but is not in the shulchan aruch.

the OU will only go according to what is a clear halacha or chumra that's in the shulchan aruch, however Rav Belsky like someone said before, said that we should go according to the chumros that people were always noheg

because the OU goes according to halacha and we trust them all year, doesnt mean people shouldnt follow the chumros from their parents/community/chassidus

The aruch hashulchan by aseres yemei tshuva has a chiluk between different types of chumros. Any chumra which would be assur midina (like say chalav stam-if it's a problem it's assur midina) you shouldn't be makpid on during aseres yemei tshuva (because it shows you are doing something assur year round). However, pas paltar which the gemara says is mutar you should be noheg during aseres yemei tshuva. I am not sure how this would play out by chumra d'pesach (which the gemara itself already says we are more machmir on)
