They essentially said that they have no clue. They are simply relaying what the owner told them, and you should ask your rav for kashering questions based on what they found.

In a takeout place, everything is fried in the same oil, which would make the oil treif and subsequently tarfen up all the kosher chicken fried in that oil.

Safek shishim in the fryer?The oil in a deep fryer isn’t changed for long periods of time. There were probably enough treif chicken pieces over time כנגד the entire volume of oil.

In the originally kosher chicken that went into the fryer. It is not clear at all that you can say the oil became entirely chicken., Even in the oil you can deal with it being only a smaller percentage of the taam chicken in the oil.
