Pesach Chocolate Chip Cookies:
1 cup sugar
1 cup brown sugar
2 Eggs
1 cup oil
2 tbsp vanilla sugar

Cream sugars, eggs and oil together then add remaining ingredients...

3 1/4 cups almond flour
1 cup potato starch
10 oz chocolate chips

Roll into logs and wrap in parchment paper and freeze for 30 minutes.
Slice and Bake @350 degrees for about 15 minutes.

Substituted brown sugar for boiled sugar with hazelnut bits to brown it
Substituted oil for schmaltz
Substituted vanilla sugar for boiled sugar with lemon
Substituted potato starch for more almond flour
Substituted chocolate chips for roasted almonds

I have met people that made their own potato starch. Though I never heard of people making their own almond flour.
