Pesach Chocolate Chip Cookies:
1 cup sugar
1 cup brown sugar
2 Eggs
1 cup oil
2 tbsp vanilla sugar
Cream sugars, eggs and oil together then add remaining ingredients...
3 1/4 cups almond flour
1 cup potato starch
10 oz chocolate chips
Roll into logs and wrap in parchment paper and freeze for 30 minutes.
Slice and Bake @350 degrees for about 15 minutes.

Substituted oil for schmaltz
Substituted vanilla sugar for boiled sugar with lemon
Substituted potato starch for more almond flour
Substituted chocolate chips for roasted almonds
