Can anyone recommend a hotel in Jerusalem under $300 all-in that allows you to set the air conditioning in your room (very sensitive to this and I'm reading tons of reviews for hotels where it's controlled by the front desk).

I spoke with Rabbi Weiner guy Rabbi Farkash. I’m pretty sure he said the plaza he had minor reservations about one of the cheeses and was going to visit again soon otherwise all good.
Got this from Rabbi Kuber:

“It seems that you can eat everything for breakfast except for hard cheeses and except for fish, other than salmon.
This applies to year-round, not to Pesach”

Looking for an inexpensive hotel for a couple of nights in Jerusalem with a decent hechsher. So far I am considering the prima palace and Ramada. I prefer the location of the prima palace. Is one hotel significantly nicer than the other? They are both around the same price.

big plus of ramada is the pool/health club (prima iirc only has a mikva). but location is weak if u want to walk around machne yehuda/old city/the heart of Jlem (though it's close to the bus terminal and train useful for going outside jlem).

it's a 5 minute train ride or 15 minute walk to the shuk

I would like to solicit your input on the nicest hotels for non-kosher visitors.  We are planning a trip for next March (our first to Israel)
and will be there for 9 nights.  Obviously, Tel Aviv and Jerusalem will on our list.  We will add a Northern visit to our agenda (not sure where).
What is nicest in Jerusalem?  Waldorf, King David, David Citadel or ??? 4 nights?
What is nicest in Tel Aviv?  Intercontinental, Jaffa, Drisco, or ???? 3 nights?
Where else should we stay? 2 nights?

All good choices for Jerusalem but all different. I personally would choose the King David.
