Arriving in LHR terminal 3 on BA, connecting to AA also in terminal 3. Would 1 hour connection be sufficient without checked bags ?

I think fast track is only available for departures not connections, you don't have to exit airside just proceed to connections with your second boarding pass
Flying Emirates to ATH How much time needed to transfer to Aegean? I'm assuming its different terminals and is there a smooth way to connect? Also would Emirates tag my luggage to TLV w 2nd leg booked separately on Aegean. They do have a codeshare agreement

Incoming and outgoing flights would both be with ITA airlines.Traveling with a family of five in luggage. There's another option that has an 8-hour layover, but if the just under 2-hour layover option is viable, I'd rather do that one.

Delta JFK-ATH then Elal to TLV with 2:10 stopover booked separately with luggage, I assume is very risky, but would they tag it in JFK to go to TLV?
