I did that this past Aug (had a day stopover in amsterdam with unvaccinated kids, KLM- JFK to TLV).
We walked around the city to see the canals, went on the ferry back and forth, then did the tour of the old shul -


 Online it looks like americans need to be vaccinated? Can you clarify if that changed since you went or it wasn't enforced.

FYI- they dont let you bring in a wheely carry on to the shul - so someone of our group had to stay outside the whole time with it...very annoying).

Do they let strollers  or backpacks?
Is the anywhere in the airport we can leave our luggage?

I dont recall giving any kind of vaccination certificates in for anyone (even the vaccinated adults), so I'm not sure if things changed.
the shul lets you bring in backpacks and we had no stroller, so not sure about that.

The horror is something recent, so experiences won't help you.
My understanding is that getting into the boarding area is the issue.
You arrive behind it.

We have a 10 hour stopover august 15. Has anyone done a one day stopover in the past few weeks that can share 1. how the airport was both clearing passport control and security on the way in?
2. What vaccinations are required according to the Netherlands website seems like you need to either be vaccinated within 270 days or boosted ? Have they been actually checking ?
3. open restaurants that are closest to the downtown area specifically the Ann Frank house .

I was there 2 days ago: CY milk, yogurt and yellow cheese, PY bread (white and brown) and many other regular products from the hotel according to a list on the coffee machine

Take the 9 hour you would rather wait an hour in the airport then rush through the city IMHO.
