If you want to put a pot with raw food on the flame and the flame is too high and will burn the food lowering the flame might be considered אוכל נפש, AYLOR But after cooking/searing why would you be allowed to just lower the flame?

Only issue I see with that is causing the numbers to change. You're allowed to add water to a Shabbos kettle on Chag (thereby changing the temp, and causing the heating element to kick in), as long as it's the type that won't cause an extra light to go on.
