You can speak to the mashgiach on site and and ask him to show you what hechsher everything is. I was there recently and he showed me that almost everything by the breakfast was from a reliable hechsher so I felt comfortable.

I don't know if you can rely on the Setai, but I know what you can't rely on. You can't rely on DDF for or any other sort of forum or anonymous chat like this for Kashrus questions. Although if this to you is a reputable way of deciding then you surely can eat in Setai.

Just returned from a trip to Israel. Here is my take on the Jerusalem restaurant situation.

Waldorf Astoria Jerusalem- impeccable service, top notch ambience, food is a disappointment.
Red Heifer- great ambience, service was slow, food was expensive and not up to par.
Skyline- Ambience is subpar, sevice was great, food was surprisingly outstanding. Would definitely put food quality it in the same league as mikes bistro and other high quality nyc restaurants.

Last time I was there it is only the one before security. The one after security in the food court was open on Shabbat so it had no hechsher...
