In reality it's even simpler, as a former student visa holder I'm familiar with the system; students have to be registered with the DHS SEVIS system and the Designated School Official (DSO) has to certify attendance every semester. If the schools had a spine they would just notify SEVIS that said protesting students are not attending the school and their Visa's would be automatically cancelled. They would then have 60 days to leave the US or be subject to deportation etc.
