Update from Zetko, and thanks @chff for pushing me on that -
they were very responsive, and after some back and forth it looks like the FA removed the plastic shrink wrap from the whole thing, and the hot main from the foil.  (the appetizer was upposed to be served cold, which explains that, although there's no reasonable reason to serve shawarma and couscous cold).
I was sitting in 1D and I think I saw the meal unwrapped in the rack, but it may have been done prior.
the OU was less interactive, but assumed the same.
Does no one take responsibility for the inflight training at all?

I just want to mention, after arranging some charter flights and being involved with KSML (including producing our own), this is a very complex matter, with many hands involved, such as the Kosher Caterer, airline handling company/kitchen, airline crew etc

There are also a few types of KSML, such as "fresh", "frozen", "long shelf/stable"

I agree. Now that I have their ear I will mention that to the caterer.



ETA - their response: The airline crew and the airline kitchen are all very well aware of how to handle the kosher meals. But we can certainly add to the label such instructions.

My experience with KSMLs- flying Asian airlines there were always issues (these experiences weren't in recent years). Israel to NY and back never any issues. I think newer FAs especially on routes where they might run into it less get confused.

The OU called, was helpful in explaining the process. Apparently this caterer doesn't even service AA at all, so they're trying to figure out where they even got the meal. they recommended complaining to AA - I requested a KSML and ultimately, didn't get one, even though they told me I did. I will do so.
In conclusion -   i was happy and impressed that both the caterer and the hashgocha took this seriously, and are working on it, and were transparent with me.
