The fine print said that if the Dr. doesn't respond within 1 business day, they can just fill it based on my info.

I have taken advantage of that fine print many times and never had an issue.

Just get a new prescription. They usually expire after a year anyways.
True,  but my year supply of monthly lenses usually lasts 1.5 years, since I usually wear them for 6-7 weeks. I think it's worth it to just get a new prescription at that point anyway, even if I could take advantage of the fine print.

Because there's no difference between a prescription for say morphine and contact lenses. Just like they wouldn't trust you for prescription drugs they also don't trust you for prescription lenses.
It's stupid, but that's how it works.

Its for your own safety. Wearing lenses (glasses too) that are not your prescription for a week or more can permanently make your vision worse.

I do wear lenses but never had a prescription actually written out. Picked up in Brooklyn with no issue and in Israel
