Staying at a hotel over shabbos. The hotel presented me with breakfast vouchers. Can they be used on Shabbos? Is that considered paying or pre-paid? And if I can use them, can I have hot coffee, assuming that it was almost certainly made by a non-Jew, and they the majority of guests (prob 90%) are non Jews?

in NYC, Rav Dovid Feinstien holds it's Assur for drinking וכן פשוט מהסוגיא that if you are Makpid it's considered Psoles Gamur, as opposed to in New Jersey where it's just a matter of preference it's muttar because it was drinkable before. The same applies to washing dishes, since it would be usable without filtering, it would be OK.

Many many poskim are speaking specifically from this situation with infestation, and conclude that if a goy would drink it, considering it pure, it's not bichlal psoles. In addition that opening a sink is not a real מעשה ברירה, though some are Machmir to let the water drain the first second after opening for that reason.

I hear that some might learn like that and that goyim affect whether something is considered psoles.

You missed the additional part of this way of ברירה by turning a faucet on is definitely considered a שינוי at least, so ספיקא דאורייתא לחומרא doesn't apply here. Just look in Shary tshuva on the place you quoted above. So in your words, unless you prepare the water before shabbos, or just using spring water, no sink water can be used on Shabbos, which is not the case in most Jewish houses AFAIK.

Absolutely NOT! It is derech borer. I is the step before drinking- filling up the cup - just like the cases in the shulchan aruch. (Perhaps a water fountain would be more like derech shtia but not necessarily because it's not the act of drinking that does the filtering rather the the turning on of the water)

I really don't understand why you are still arguing, Did you look in the Shary Tshuva I referred you to? It's on the daf in Hilchas Shaabos 319
where you quoted from. He talks in a very similar situation when someone attaches a cloth over the bottle or barrel when he fills the cup, same goes for faucet. It all depends where you place the cloth, if on the cup you're pouring "into" , it's דרך בורר indeed, if on the bottle you're pouring "from", it's not דרך בורר.

Besides for that, turning a faucet on is in no way a מעשה ברירה, and the fact that you do it everyday certainty doesn't make it so. It is NOT the normal way of filtering in any way, it's just the normal way of turning a faucet on, and by chance you get filtered water everyday. (no need to use the big thumb for this :) )

Eruv question:

If there are two locations surrounded by an Eruv and they are connected by a bridge, is it permissible to carry across that bridge? The practical application is that the TRYP by Wyndham Miami Bay Harbor is located on a small island which is just a bridge away from Surfside, FL. According to the eruv map of Miami, both the island and that portion of Surfside are bordered by an eruv (the island being it's own eruv), but the bridge isn't. Is it permissible to carry across?
