And for those practical reasons they are kept entirely separate in my house. Everyone eats as much Matzo as they want. When everyone is done with it, it is put away (and if needed, plastic tablecloth replaced), and then other food is served. Nothing goes back into the kitchen once it came out to the table.

This is different then regular as you are b'davka being mesalek the pas. Also, here it wasn't even eaten at all with the pas.
The truth is that i don't really need any Gebrochts things. But 2 things are nice:1) Not having to worry about crumbs is a nice +2) Being able to make Kiddish after davening without washing is also a nice +

whats this gebrokst thing all about, wasn't it created when they were all eating laffas, today we are stuck with cruchy crackers + non gebrokst, one of the two would make more sense IMHO
well the two have nothing to do with each other. Actually gebrokts (at least the matzah/cake meal issue) has a source in the gemara

Isn’t his point that when the gzerah made in the Gemara was recorded they were discussing a different form of Matzah more similar to a laffah?

the gemara discusses ground matzah. Do t know what form it was but there was definitely a concept of rikikei matzos bzman hatalmud.
A concept perhaps, but what were they actually eating? Hillel’s sandwich was definitely a Laffah. You can’t quite be כרוך a cracker.
