Wood
Pros: Cheap
         Easy to change shape or size as your needs for space change
         DIY - most people would be able to build it from scratch or make modifications (e.g. add windows)
         Can be converted to chazzon ish (replace metal screws with peg screws)
         Can integrate a schlock to the structure
Cons: Heavy, Can warp over time. (note: if you use enough fasteners and are also careful to assemble it balanced this can be minimized)
         Needs lots of storage space

Fiberglass
Pros: Easy Setup (on level ground)
         Length/width is reconfigurable (you just need to buy a few 2x4 beams if you change layout)
Cons: Expensive
         Greenhouse effect on hot days (need to budget for several open/shut windows)
         Connection threads can become bent even with proper storage (need to budget for the odd panel replacement here and there)
         Can Crack or Break

Canvas
Pros: Setup in minutes
Cons: Not accepted by all poskim
         Poor protection from cold Weather
         Wind Can be bothersome.

Is 3/4" not strong enough? They're only $10 each.

Might be, maybe the question is why they’re using the wider ones then.

Also, the fittings and canvas are sized for the bigger pipes, not sure how smaller ones would work.

I was just reading that as well.

Home Depot doesn’t carry the 1-3/8” pipes, closest are 1-1/2” and 1-1/4”, and they’re pretty pricey.

If you need 11 $30 pipes that’s another $330 on top of the kit.
I would suggest to call them and clarify what they mean.

Since this has become the sukkah master thread, I figured I'll ask here:

My sukkah is made up of 3 walls of panels, and I'm using the back wall of my house as the fourth wall.

The cross beams are not coming out from the house wall, rather go across the sukkah itself, so the "ches" isn't technically attached to the wall.

In the past years, I've had it stay in place by anchoring one wall down with some support beams.. but that's not really working with this year's wind, so basically I need an idea to secure the sukkah walls to the house wall.
After some searching, seems like I need something called a two ear bracket (see picture), but I need one which can fit a 3 inch thick panel, and havent found anything that big.
Any ideas?

Why not just a regular L bracket?
1 side in the wall & 1 side in the panel.

and if for whatever reason you want the strength of the both sides from this kind of bracket just get 2 L brackets for each wall, one on the inside one on the outside
nothings impossible- the word itself says Im possible

Id prefer something I can leave on the outside house wall all year long, don't really want a l bracket sticking out (it's a brick wall).  But if I can't find anything else, I'd do that

So the bracket you asked about isn't good?

Of it is a brick wall then you would need to drill a hole and use anchors but it should not be a big deal to take the screws out each year.
