Never said we don't. But I never heard of specifically eating dairy in connection to the Alter Rebbe's release on the 3rd/5th night of Chanuka.

We eat montashan on Purim because that what Daniel or Esther ate

OP implied there was particular reason to eat dairy on 5th night to celebrate the Baal HaTanya's Geulah on that day, to which Dan wondered on celebrating a yoma d'pagra with dairy.

Where I should start? Let me just say that a Sanzer chassidus don't just incorporate a certain food for all because the Rebbe's mother's mother served blintzes (which she likely considered a choshiva dish) to honor a certain day that was very special in her father's house.
