Could I still fill up 3 weeks with things to do or will just go crazy?

Plan it well and you should be fine.
Yerusholayim in depth, well researched can take more than a week easily. (Once you get past the tourist headlines...)
Bnei brak, the coastal cities... yam hamelach, wineries, beaches,
Chevron, kever rochel, shiloh,
Machtesh ramon... and the south
The various army museums.
Tons of realy good parks in almost every city.
And honestly, the four year old will only remember that he had a good time, if that much.

Inspired by the fellow who posted in the hotels thread about shuls near his hotel, when there are tons, is there a point in me putting in the effort to create a thread of shuls across JLM (especially interesting and unique ones, but of course all the shteiblach too)?

Outside of the Golan and the North Galil there is still plenty to see in the north. Akko/Tiveria/Haifa/Tzfat etc....

Visit hospitals, plenty volunteering opportunities, etc.

Teveria is pretty far from Lebanon and doesn't get sirens often.

I don't know, as the only time I did that kind, was many years ago.
But I do remember the tour guide who we went with was Aharon Tzvi Saks, who lives in Meah Shearim and had a 12 or 15 seat van. He took us all over eretz yisroel, in a marathon trip, from neitz by the Kosel till very late at night.
This is the contact I have for him, I hope it's still accurate: 025eight22257 and American # 91seven, 4seven4, 8one60
Just an update: He no longer has a big van, just a regular mini-van.
