Steelhead is less fatty and therefor less "fishy". The trend started a few years ago when the expert cook ladies decided it's a better alternative to regular salmon. Google too has some nice things to say about Steelhead.
I remember when people used to ask always for baby salmon and since then it outnumbered regular salmon to the point where you need to ask for regular salmon specifically. I can't vouch for all neighborhoods though that this is always the case. Aderabeh, ask your wives and report back
(Eta, most people are not aware that "baby salmon" is just a given term for a different breed just because it comes in sleeker cuts, they genuinely believe it's juvenile regular salmon that didn't develop yet the full strong "fishiness"... Not that it makes any difference.)
