Excellent question
Tishbi in binyamina has a winery, a chocolate shop and a nice cafe but I am not sure it's mehadrin, I can check.
There's also the binyamina winery
A bunch of really nice ones in the Shomron and also Gush Etzion

There are many in the galil but unfortunately I don't feel comfortable sending people there right now

Kamisa winery has an Eidah Hachareidus restaurant. But it is in the Galil. (I have no clue if it is open nowadays.)

Barkans 2023 wines are Eida. (And I am pretty sure all of their non shemita wine is under the OK)

Don't think tishbi or binyamina are mehadrin. Gush etzion has a rabbanut mehadrin restaurant

Golan heights Winery also has a tour but I don’t know their current schedule.
No idea if food is mehandrin. Wines are Mehadrin
No personal experience as my schedule didn’t work with the timing for the English language tour.

Right I meant that it says mehadrin on the label, which is better then someone I knew a long time ago who's Kashrut policy was "if it's in Hebrew I eat it"

So curious what the different standards of wine are, because even for basic Kashrut it needs to be dati.Jews the whole way through.

AFAIK, the differences start with establishing from which point needs Dati. Is it fine for a non frum person to drive the truck transporting the grapes, operate the dump function in the truck... or bec the grapes are crushing each other, it already called the start of the wine production proccess and you need Shomer Shabbos.

Also, there's the hotly debated question of "Mi Yehudi". If i remember correctly, just a couple of years ago theres was a whole kerfufle when Barkan wanted to change to Eida, and the Eida insisted on investigating the Jewishness of all the Ethiopian post squeezing workers there, who had been accepted as a matter of course by the previous hechsher.

Thats the best of my limited kashrus knowledge, maybe @moko or @aygart can explain better to all of us.

Are people for the most part doing normal things now. I.e. going up north meron tzfas, going to Dead Sea?

Was just there.
The Dead sea forsure people are going, it's very safe.
Up north, depends on the person. Some are going, some are not.
